Хочу взять vds.
Что мне нужно будет установить на сервер, чтобы работали пхп скрипты и была база данных mysql?
Так же мне нужно следить за нагрузкой на сервер (может для этого ещё что-то нужно ставить) и фтп доступ для закачки файлов.

Если это будет FreeBSD то можно через sysinstall установить php, mysql, apache. Либо из портов /usr/ports
Под линуксом другой установшик пакетов. К примеру apt-get. А еще лучше попросите админов и они вам все поставят
